Consumable creations...(I am hopeful in this)
I love to make soup in the winter, because for me it is like making a salad…the more you put in it the better it is. My family hunts so we always have venison on hand, and I am always trying new flavors to add to it for variety. This is just a basic no frills yet flavorful good and hearty soup, and soon to become a family favorite…so I am keeping track of the ingredients so I do not forget. 3lbs of venison cubed
6-8 med to large potatoes 2 med onions diced 3-5 stalks of celery chopped 4 enormous pieces of garlic minced or 4 whopping spoons of minced garlic from the jar 6-8 frozen tomatoes from the garden peeled and chopped or a big ol can of diced tomatoes 1 reg sized can of tomato sauce 1 bag/1lb of frozen mixed vegetables 8 cups beef broth 2 Tblsp of Homemade Italian Seasoning: ( 1 ½ tsp dried oregano, 1 tsp marjoram, 1 tsp thyme, ½ tsp basil,1/2 tsp rosemary, ½ tsp sage) 2Tblsp Worcestershire sauce Heat olive oil in pan and add cubed venison. Brown… add salt and pepper, and Worcestershire Sauce with just few remaining minutes of browning. Remove from pan with slotted spoon put in crock pot or soup pan. Place onion, celery in pan cook several minutes… add diced tomato sauté for few more minutes add seasoning stir, cook for (a few more minutes)… add to big pot. Add potatoes and broth, and tomato sauce. Cook until potatoes are tender add frozen veggies cook till heated through. Let half of it cool and freeze it. Enjoy the remaining with warm fresh bread!
